KENT, Conn.—SoDelicious Homemade Bakery has reopened in the same spot it occupied five years ago, and owner/baker Stacey Spence could not be happier.

Spence and her brother, Paul, opened the bakery in 2015 after John Casey’s N.M. Watson Wild Bird Supply closed and stayed there until 2020. “This spot means so much to me,” Stacey Spence said, “and I love being back. When I got the call that the location was available again, I leaped right back in.”
The scones, jelly donuts, bagels, berry pies, Linzer cookies and apricot bars are made with the pride of an artisanal master baker from a bygone era. Spence bakes everything by herself and adds new recipes guided only by what excites her or looks like fun to make. “My favorite thing about baking is everything,” she said. “I love all of it, even when I don’t.”
She continued, “Nothing comes out of a box or is premade. If I can’t make it, we don’t sell it.”
Spence adds that she can get a little obsessed with making everything from scratch, even the vanilla.

There might have been an ancestral push in Stacey’s destiny to become a baker. Her great-grandfather was also a baker and family legend has it that he was a founding member of the Bakers Union in New York City. She initially intended to study at the Culinary Arts program at the Institute of Culinary Education, but changed direction to the Baking and Pastry Arts program at the last second.
After completing that program in 2014, she lived in Colorado and launched SoDelicious as a wholesale business. Still, she yearned for a professional kitchen in a real bakery. White boxes, bound up with red and white string, were the icing on her dream.
She found a space in New Milford that didn’t feel quite right, but later a high school friend suggested she take a ride to Kent. There, she met John Casey from Kent Green and that was it. She had found exactly what she was looking for.
When you walk into SoDelicious, Susan Gilchrist, the front house manager and good friend of Spence’s aims to make everyone feel welcome. They want you to feel excited about walking into the bakery and to know that they are just as excited to see you.
